For the filling
Spring onions:4-5(finely cjopped)
Shimla Mirch(Capsicum): 1(finely chopped)
Cabbage (bund gobi):as much required
Egg: 1(boiled or scrambbled, your choice)
Potato:Small, 1 (cut in cubes & boiled)
Black pepper powder:1tsp
White pepper powder: 1 1/2 tsp
Salt: (to taste)
Vinegar: 1 tbsp
Soya sauce : 1tbsp
For the crepes:(pancakes)
All purpose flour(maida): 1cup
Water : 1/2 cup
Milk : 1/2 cup
Salt: 1/4th tsp
- Heat oil in a pan or a wok.When hot,add all the veggies and stir fry for a minute & a half.Add in the spices ,soya & vinegar.Remove from heat.Add in the potatoes & egg(which i have boiled in this instance).Put aside.
- Now for the crepes , add all the ingredients & beat well to a smooth consistency.Pour in to something easy to use(like a jug) i am using my measuring jug.Heat a non stick frying pan until you can see smoke rising from it,Decrease the heat slightly,brush with some oil & pour some crepe mix in it.I made 13 pan cakes from this mix.
- .Now make a paste of flour & water,put some filling on a pancake, make a roll,securing the ends with the flour & water mixture.You can eat it as is Or fried.Personally i prefer the fried version :)
This is the lighter version of the dish(for all those who have a problem with spicy foods) but my palate is proud Pakistani(and as long as the spices are not shouting at the top of their lungs,i cant taste anything) so for the filling you can also add red chilli flakes, green chillies finely chopped, chilli & garlic sauce , coriander & cumin seed.Add chicken or beef to change the flavor if you want.Learn how to make crepes(the actual process, not the recipe) from you tube.Some great videos are available.I didn't exactly know how to explain it in words.
