<a name='more'></a>It is a dish that is made of Chick peas and it tastes incredible.Now the variety that you get at your local food stall , food court or hotel comes with an array of chutneys and dressings.But i like mine not too complicated. so this recipe is just for the basic Channa chat.If you want to add any chutneys,yogurt, or garnishing... (feel free to do so:)<br />
<u><b>Ingredients:</b></u><br />
Chick Peas: 1 cup presoaked overnight<br />
Potatoes: 2 (medium) cut in cubes<br />
Garam masala: Includes 1 cinnamon stick, 4-5 cloves, 1 tsp zerra ,4-5 black pepper corns, 2 black cardamoms.<br />
Salt: 1 1/2 tbsp<br />
Chilli powder: 2 tbsp<br />
Ginger garlic paste: 2 tsp<br />
Water: 3-4 cups.<br />
<u><b>Method:</b></u><br />
<b>1. </b>In a pressure cooker,add the pre soaked and drained chick peas.Add in 3 cups of water,salt,chilli powder,all the garam masala, along with the ginger garlic paste.<br />

<b>2.</b> Bring to a boil.<br />
<b>3</b>.Close the pressure cooker for 30 min.<br />
<b>4.</b> Open the cooker.Take a wooden spoon and mix the chick peas vigorously for 2-3 min. (this helps the skin on the chick peas to seperate, which really helps bring the flavor out and also allows the the chick peas to cook thoroughly.<br />

<b>5.</b>Add in the potatoes.Add another glass of water , bring to a boil and close the cooker again for 30 min.<br />

<b>6.</b>After 30 min open the cooker and allow the mixture to simmer.Reduce the gravy as mich as you like.I like mine with a bit of gravy so i dont reduce it too much.Some people want no gravy so they simmer it until no gravy is left. depends totally on your preference.<br />
<b>7.</b>Last thing to do is to taste the salt and your channa chat is ready. Put in a bowl.Sprinkle chat masala over it.Put some papri (Papri can be bought from the market or made at home.its easy.Will try to put up a recipe for it soon)<br />

<b>8.</b>Garnish with thinly sliced onions(i cant stress the "thinly" part enough.Its very hard to eat big chunks of onion and it ruins the whole dish.It would be better if you slice them in the beginning and soak in ice water , some sweet white vinegar and a tsp of salt for a few hours) and mint leaves which have been finely chopped as well.<br />
<b>9.</b>The aroma the is produced when you put onions and mint on piping hot chat can not be described in words ;)<br />

I have learned alot from Pakistani food channels.At one time i was an avid viewer of BBC food. But unlike the professional chefs on BBC food , our local chefs have no qualms about sharing their techniques and little tips and tricks that make what we eat in restaurants so unique.<br />
I am a big fan of Chef Zakir.This is one of the very first recipes he shared on air.He called it "Chicken croquettes". Now i have no idea what a "croquette" is, i have googled it, and the dish does not resemble what i am making today at all;)<br />
so i don't know why chef chose to call his dish a "croquette" but who cares? right ;)<br />
Here we go than.....<br />
<b>Ingredients:</b><br />
chicken: 4-5 pieces (boiled and shredded)<br />
Onion: 1 (medium) finely chopped<br />
Eggs: 2<br />
salt: To taste<br />
White pepper powder: 1 tsp<br />

Red chilli powder: Half tsp<br />

Cut the bread slices with cutters if you have them.<br />

My mom is a great cook(as all Pakistani moms are). I always wanted to cook like her but for some reason i could never get quiet the flavor profile that she has in her food. Pakora's are the first thing i learned to cook exactly like her.So i am really proud of this recipe.<br />

<a name='more'></a> Pakora is a fried Starter (i guess) which is made with chick pea flour and vegetables.Most people in Pakistan make it but recipes and ingredients vary according to the cook and the household.<br />
This is my way of making it and i always am complimented on it.So today i am sharing it with you:)<br />
<b>INGREDIENTS:</b><br />
chick pea flour (basin): 1 cup<br />
Onions (medium): 2 thinly sliced<br />
Green onions: 2-3 thinly sliced<br />
Potato:1 cut in triangles and boiled for 3 min<br />
Eggs : 2 One boiled n cut in triangles<br />
Green chillies:3-4 thinly sliced<br />
Coriander and mint leaves : chopped <br />
Lemon juice: 2tbsp<br />
White vinegar (sirka): 2 tsp<br />
salt: to taste (i used 1 tbsp)<br />
red chilli powder : 2tbsp<br />
Dried fenugreek (kasuri methi): 2 tsp<br />
Mango powder(Amchoor): 2 tsp<br />
cunim (zerra): 1tsp <br />
Black pepper powder: 1 tsp<br />

4.Heat oil in a frying pan on medium heat.Do not fry in oil that is cold because you wont get the right consistency.And if the oil is too hot the pakoras wont cook from inside (believe me a pakora that is a gooey mess from inside is totally gross)<br />

<b>TIPS:</b><br />

<li>The more onions,mint and corriender you put in the batter , the better will be the taste of the end product.</li>

<li>some people use baking powder but i find that baking powder will make the pakoras puff up and they absorb too much oil(i don't like that) but if you want to use it than only add a pinch.</li>
<li>Keep the veggies and the batter separate until just before you start frying because onions will make the batter watery if left in it too long. </li>
<li>Apart from the above ingredients , dried pomegranate seeds. dried corriander seed and dried chilli flakes (if u have them on hand) can also be added.</li>
<li>Serve hot.Cold pakoras just don't taste right:) </li>

One day i was just channel surfing (b/c i was bored out of my mind) & i came across this chef who was making these rolls.The problem was that he was speaking Punjabi(& the only Punjabi i speak or understand is limited to the phrase"<i>Aae shadi nai ho sakdi oye!!!</i>").So the first time i attempted to make these,it was more or less from visual memory than from any real understanding of what the chef was trying to teach:)Suffice it to say , i failed miserably.Since than i have tweaked the recipe quite a bit.Now at least it is edible & presentable(lolz).<br />

This is the lighter version of the dish(for all those who have a problem with spicy foods) but my palate is proud Pakistani(and as long as the spices are not shouting at the top of their lungs,i cant taste anything) so for the filling you can also add red chilli flakes, green chillies finely chopped, chilli & garlic sauce , coriander & cumin seed.Add chicken or beef to change the flavor if you want.Learn how to make crepes(the actual process, not the recipe) from you tube.Some great videos are available.I didn't exactly know how to explain it in words.<br />

Add the tomattoes.Cook for another 3-5 min.Untill the water from the tomattoes is reduced and the oil surfaces.<br />

Sift all the dry ingredients.<br />
Add the wet and dry ingredients.Make in to a dough.<br />
Roll dough between two sheets of butter paper.<br />
cut the cookies using a cookie cutter.Place on an already greased baking tray.<br />
Bake in a pre-heated oven at 180 degree Celsius for 10 min.<br />
Cool on a wire rack.<br />
