Pineapple Upside down Cake :


Ingredients: 
Maida(all purpose flour): 1 1/2cup

Baking Powder : 2tsp

Vanilla essence: 1tsp

Eggs: 4

Butter: 1  large (200gms)

Sugar: 1 cup

Cherry or pineapple: 1 tin

Method:

Put 1/4th cup butter along with 1/2 cup sugar in a pan.Add juice of two lemons to it when starts to boil.

Beat the rest of sugar with the butter.Add in the egg yolks one at a time.

Sift flour and baking powder.Divide in three portions and fold in the butter mixture one at a time.
Beat the egg whites till fluffy and fold in the butter mixture as well.

Prepare the cake tin.Line with the pineapple slices.Add the sugar mixture on top.Put in refrigerator for 5 min.

Pour the cake mix over the pineapples.
Bake in a pre heated oven at 180 degree Celsius & 350 degrees Fahrenheit. For 45 min or until a skewer inserted comes out dry.  P.S
Making this cake was an experience for us (thanks to my brother & KESC,).First the pine apples used should be whole slices not chunks(which my brother insists , is what he bought.Even with the evidence saying otherwise).So that is why the pineapples on the cake look like they were under attack by Jack the ripper ;(

Once we got over that hurdle, as soon as the cake went into the oven, KESC had one of its mood swings & (poof) no electricity.Too bad for us as we use an electric oven.So after waiting 45 min for the power to come back, this is what we ended up with :)






Not bad(if i do say so my self) And it tastes good too.
