SOOJI KA HALWA:

"Sooji" or semolina is used in Pakistan to make a very delicious dessert called "sooji ka halwa". It is usually made during religious festivals and eaten as it is or with "poori" which is made of flour.
It is very easy to make and really tasty.Particularly the breakfast of "halwa poori" is very famous and a lot of hotels and vendors sell it piping hot for their early morning customers.



 INGREDIENTS:
Sooji/Semolina: 1 cup
Milk: 4  1/2 cups
Sugar: 1 cup
yellow/orange food coloring: as required
Eggs: 2
Almonds and coconut: (chopped) as required
Kewra/Vanilla essence: 1tsp
Oil: As required

METHOD:
Heat oil and add sooji and sugar to it.

Keep stirring.
Cook until,the sugar is no longer visible,sooji has started to brown and you can detect its aroma.

Add food color to the milk and add the mixture in the pan with the sooji.Cook until the mixture begins to thicken.
Keep stirring , then add the two eggs.
 Cook some more and than add the almonds and coconut.
Cook for another 3-4 min.
Turn off the stove.
Add the kewra water or if you don't have that , vanilla essence.

 Mix well.
Spread in a baking tray.
 Decorate with silver leaf and cut in to squares.
 Serve:)

TIPS:
  • KEEP stirring!I cannot stress this enough.If you stop, it will all stick to the bottom and you will end up with quite a mess.
  •  One way to tell that the dessert is done is that it will start to not stick to the walls of the pan anymore.
  • Allow the semolina 3-4 min to cook in the beginning otherwise the end product wont taste right.
